I Made It! - Costco Connection® Magazine Blackened Salmon Sliders

Hello. I'm back on Sweet Honolulu. At least I am for now. I haven't been around because I've had some life changing events happening, which has caused my future to be uncertain at the moment. I won't discuss my circumstances in today's recipe journal entry, but when I'm ready to share it with you, I will. Honestly, I don't know what's in store for this website in the months to come, but hopefully I'll continue to post recipes and whatnot. Today I'm feeling good, and I will take each day as it comes. You know, even when Life throws you curveballs, you still have to eat. We had been ordering takeout quite often during the past couple months, but a few weeks ago I started cooking on a regular basis again. I've found the home-cooking dinner routine therapeutic, in a sense. No new recipes, though. I've just been cooking dishes that have been in my meal rotation for years. Easy, familiar dishes that don't require much thinking.

I Made It! - Costco Connection® Magazine Blackened Salmon Sliders

One of those recipes is for these blackened salmon sliders. I would say that this is probably the best recipe that I've tried from any Costco Connection® magazine. And that's saying a lot because I've tried a multitude of recipes from many of their different issues. I'm not exaggerating when I tell you that this sandwich is delectable.

I've made a couple minute changes to Costco's recipe to suit my family's tastes, and as always, I'll let you know what they are in the attached recipe. Also, one thing the magazine didn't include was the ingredients for a roasted garlic aioli, so I added my recipe that I shared with you on September 12, 2023, to the Costco recipe. The one tip I'll leave you with today is to please follow the recommended cooking time for the salmon fillets, which is between 2 to 3 minutes per side, depending on their thickness. This is critical to achieve a perfectly cooked moist salmon. You don't want to bite into a dry one.
